Blue Stilton and Sweet Olive Oil Tortas

I know it should be Pears but these grapes sure were tasty with it!

Ginger Sesame Salmon

First you have a nice salad with a silly tomato rose and some Balsamic vinegrette...


Then you have a nice piece of Salmon with a Ginger Sesame glaze made by reducing some light Soy sauce with Ginger paste (ground Ginger and Sugar) and Toasted Sesame Oil. Add in a side of Jasmine rice and your good to go.

Cap'n jucy's

So I went with Allynn downtown to cap'n jucy's today, and had a veggie pizza dog, and might I say it was the best hotdog I've ever had. However, it did not occur to me to take a picture.

Beer Butt Chicken... Again.

So Matt surprised me with a Beer Can Chicken, Grilled Oysters, and Roasted Garlic. I was tired... but y'know, somehow I found the strength to eat all of this!

Garlic Lime Marinated Steak with Steamed Chard, Garlic Mashed Potatoes and Grilled Onions


O.K. use a Mortar and Pestle to grind some Garlic, Salt, Pepper and Cumin to a smooth paste. Slowly add 1/2 cup fresh Lime juice and 2 tbsp E.V.O.O. and work until you achieve a smooth texture. reserve some to baste with and pour the balance over the steak of your choice and marinated for 30 min. Meanwhile back at the ranch, spin up a little R.L. Burnside and chop some Chard to steam. Slice some Onions 1 inch or so(brush with E.V.O.O. + S&P)to grill. Mash some Potatoes. Grill Onions til carmelized. Grill Steak Brushing occasionaly with reserved marinade. Eat.

Fourth of July Smoked Brisket


Rub Brisket with the rub of your choice. I went with a standard rub here but added a bunch of Garam Masala just to spice it up...


Laying it on the grill at 8 AM... I put the Brisket directly in a foil pan this time (instead of using a drip pan) to help protect the brisket from heat and mopped it with cider vinegar and the juices right out of the pan.


Here we are after smoking for 7 hrs. Just resting before the feast. It turned out fall apart tender. I always love the look on peoples face when they first see a smoked Brisket. That "you want me to eat that ?" expression. Then I get to watch them devour a plate and go for seconds... I guess it is a compliment but no one touched the bar-b-que sauce I made. Plates were wiped clean with crusty bread.

Kalbi ( yes this is the 3rd time but different I promise)

Many of you know that I use "Kalbi" to refer in general to a tasty Korean style marinade for meat that is to be grilled. This time I thought I would use the traditional short ribs... To make some delicious Soe (beef) Galbi (rib) Gui (grilling)

Gather the ingredients for your marinade. Here we have Sesame oil, Soy Sauce, Pear Sake, Black Pepper, Honey, Pear, Green onions, Garlic and Blonde Sugar.


Puree til smooth.


Butterfly 2# Beef Short Ribs.


Marinate.


Mix up a dipping sauce.


Grill to desired doneness.


Tasty Goodness


Put slices of Kalbi in a Romaine leaf. Dip in sauce. Eat. Sauce will run down arm. Tomatoes make a nice side. Dont forget to gnaw the bones...
