Spicy Vegan Potato Curry

I know, I haven't posted in forever, but..... this stuff is really good and should be up here.
here's the recipe:

4 potatoes, pealed and cubed
2 tablespoons vegetable oil
1 yellow onion, diced
3 cloves garlic, minced
2 teaspoons ground cumin
1/2 teaspoon cayenne pepper
4 teaspoons garam masala
1 (1 inch) piece fresh ginger root, peeled and minced
2 teaspoons salt
1 (14.5 ounce) can diced tomatoes
1 (15 ounce) can garbanzo beans rinsed and drained
1 (15 ounce) can peas, drained
1 (14 ounce) can coconut milk


1. Place potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until just tender, about 15 minutes. Drain and allow to steam dry for a minute or two.
2. Meanwhile, heat the vegetable oil in a large skillet over medium heat. Stir in the onion and garlic; cook and stir until the onion has softened and turned translucent, about 5 minutes. Season with cumin,k cayenne pepper, curry powder, garam masala, ginger, and salt; cook for 2 minutes more. Add the tomatoes, garbanzo beans, peas, and potatoes. Pour in the coconut milk, and bring to a simmer. Simmer 5 to 10 minutes before serving.

Dilly Beans

Fresh Dill Smells Amazing.

Ok. Clean and prep your green beans. This is about two pounds, ends clipped and cut to length.
You're going to want to leave at least a quarter of an inch of headspace in your jars, so none of your beans should be longer than that.

Here's a few seasonings.
I think the dried chiles are pretty bland, so I talked Miranda into letting me put a quarter teaspoon of cayenne pepper in as well for a touch of heat. The cayenne is variable. Just depends on how hot you like it.

Here's another shot of the prep. Each jar gets a clove of garlic, a pepper/cayenne, a head of dill, and beans.
Speaking of which, you can use either pints or quarts...
We're using quarts.

Pack the beans lengthwise into hot jars, leaving the quarter inch of headspace.
Mix and bring to a boil 2.5 cups of vinegar, 2.5 cups water, and 1/4 cup canning/pickling salt. Pour mixture over beans, leaving a quarter inch headspace.
Remove any air bubbles and cap, then process ten minutes in a boiling water bath.

Cooling on the counter.

Tapenade

1/2 pound black olives, pitted, drained of their liquid
4 anchovy fillets
2 tablespoons capers, drained
1 garlic clove, peeled
1/8 teaspoon cayenne pepper
1/4 teaspoon grated orange zest
8 sprigs of thyme, leaves only
4 tablespoons olive oil

Place all the ingredients except the olive oil in the work bowl of a food processor. Pulse to blend. Add the oil and pulse a few more times to form a cohesive but still coarse paste.
