Curry

Fry some onions, roasted red pepper and the spicy sausage of your choosing.


Add some basmati rice and water. 2 cup water to 1 cup rice


Add jar of curry paste and chopped Kale. Kale is high in beta carotene, vitamin K, vitamin C, lutein, zeaxanthin, calcium and contains sulforaphane. Kale is kinda like a super food.
it has 17 times more Vitamin C than carrots and four times more than spinach!
Wow!

Kale wilts down nicely but is also able to stand up to prolonged cooking.


Simmer til rice is ready... It ain't pretty but it sure is tasty!

Indian Dinner

Marinate some Shrimp This had Lemon juice, Brown Sugar, Salt, Cilantro, Garlic, Olive Oil and Chili powder If I remember correctly...

Fry some cumin seeds and cloves in oil til seeds start to sputter. Add 1 large sliced onion and 1 large cubed potato, fry some more. Add some turmeric and salt with rinsed basmati rice and rinsed red lentils, fry some more. Add water, bring to boil and simmer. (Oh yeah, soak rice first, 15 minutes or so, or it will be crunchy since it doesn't cook as fast as the dhal)

Grill Shrimp on a bed of sliced Onions, sliced Tomatoes and sliced Peppers. (all I could find were Seranos, not quite the same but nice heat...) Basting every so often with marinade


Serve it up with a nice herb and mixed green salad and the beverage of your choice.

Dum Aloo, Dhal with fried spices, Jeera rice, Naan and mint Raita

So Sunday a couple of cold tired hikers showed up at my door. (Chris and Cassidy) I was warned ahead of time and had prepared a nice vegetarian (for Cass) Indian dinner for them.
Cass even pitched in and chopped Corriander ( Cilantro) for the Dum Aloo

We sat and ate it on the living room floor. Tasty Tasty.
