Dinner with Kady

A little blue cheese, sliced pear and crusty bread.

A salad of spring greens and tomatoes with White Balsamic dressing, steamed Mushrooms, Jasmine rice and pan seared Halibut.

Lettuce Wraps ( Like Changs but way better)

Wash/dry lettuce. I like Butter.

Mix up a nice drizzle sauce. Soy, rice vinegar, fresh grated ginger etc.

Chop some Fungus and green onion.

Sear and chop chicken into small pieces.

Return to pan and saute with veg and fungus. Don't forget to add some Waterchestnuts for crunch and to throw in a nice stir fry sauce.

Serve with some sauces and some bean sprouts.

Very, very Tasty.

St Patricks Day Dinner


I know for many this may be considered sacrilige but this year there was no Corned Beef, Cabbage, Irish Cheddar or even Soda Bread at my house... This year I Grilled up some Steaks, Had Garlic Mash Potatoes, sauted Mushrooms & Onions and a fresh Jicama & Herb Salad with Cumin Lime dressing. Yum!

Beefy Beef and Vegetable Soup

1 lb Tri-Tip steak cut into 1/2" cube
2 Tbsp Soy or Tamari Sauce
1 tsp Olive Oil
1 Large Onion chopped
1 lb Mushroom chopped
2 clove Garlic minced
2 Tbsp Tomatoe paste
1/2 cup red wine (perhaps a nice Beaujolais Villages)
4 cup Beef broth
1 3/4 cup Chicken broth
2 Carrot chopped
2 Celery chopped
1 Bay leaf
1 Tbsp Gelatin
1/2 cup cold water



Bloom Gelatin in 1/2 cup cold water


Marinate Beef in Soy sauce


Chop Onions


Mushrooms


Carrots & Celery


Saute Onions & Mushrooms well in 1 tsp Olive Oil. (8-12 min) Remove from pot.


Sear Beef until well browned. (6 minutes ish)


Add in Minced Garlic, Tomatoe paste, Red Wine, Beef Broth, Chicken Broth, Carrots, Celery and Bay leaf as well as the Mushrooms & Onions. Bring to a light boil and simmer for 25 Minutes. When soup is ready remove from heat and stir in Gelatin until dissolved. This step is essential in creating that smooth mouth feel... Garnish with fresh chopped Parsley and serve.

Shrimp with Black Lava Salt and Pepper


Ok well you start off by shelling and veining your shrimp. I know it takes a little time but they are cheaper and you get the shells to make fish stock... and the fish stock for your rice...

Throw the shells into a pot not the garbage. (add fish bones etc if you have them, you con sometimes get them at the meat counter cheap) with 1 cup dry white wine, some onions (preferably roasted for richer flavor),3 cloves whole Garlic, a couple spigs fresh Thyme and Parsley, some pepper corns ( maybe 10), celery seed and bay leaf. Cover with water. Bring to a boil and simmer for only 20 minutes or it will get bitter. remove from heat strain out solids (cheese cloth or a colander unless its been on someones head recently) and allow to cool to room tempature.

Make jasmine rice replacing the water with the aromatic fish stock.
bring 1 3/4 cup fish stock to boil add 1 cup jasmine rice cover and reduce heat to simmer in 15 minutes she should be ready.

Slice baby Portabellos and saute.
slice baby Bok Choy and steam 7minutes
toss the two together in a bowl.

In a dry skillet cook shrimp to desired doneness (c's not o's)

plate and top with fresh cracked black pepper and Black Lava sea salt

Marinated Chicken Kabobs

We decided to marinate a little chicken and make kabobs for dinner. Here I'm grating ginger while making Miranda's Ginger Glazed Chicken marinade.

1/2 cup pineapple juice
1/2 cup soy sauce
1/4 sesame oil
1/4 cup olive or vegetable oil
1/4 cup honey
1.5 Tbsp of minced garlic
1 Tbsp grated fresh ginger
1 tsp black pepper

Marinating Away.

And since that marinade we made last night for the beef was pretty good, we whipped some of that up too to see how it goes with chicken.

Quick and Healthy Pizza

Slice a whole wheat pita in half. Pan roast Garlic. Toast pita halves and smear with roasted garlic. Top with marinara sauce. Cover with as much Onions, Tomatoes, Olives, Jalapenos, Fresh Basil and Mushrooms as you like. Add 2oz. chopped grilled Chicken and 1oz. Low fat Feta. Bake in 350 degree oven 15 min. Add an additional amount of Tomatoes and fresh Basil.
Eat both!

Spinach and Mushroom Omelette with Feta

Mix 1 Egg + 3 Egg whites with 1 cup chopped Spinach, 1/2 cup Sliced Mushrooms, Salt and Pepper to taste. Fry in a skillet top with 1 oz. Feta. Cover and cook til eggs are just set.

Toss together some Spinach, sliced Cucumber, sliced Mushroon, shredded Carrots, sliced Turkey Breast and fresh Blueberries with a nice Pomegranate Bluberry vinagrette and enjoy...

Spinach and Watercress salad with sauted Mushrooms, Onions, Walnuts, thyme, stir fried Pork and Curried Prawns

Saute Mushrooms, Onions and Garlic seasoned graciously with S&P and crushed red pepper.
Deglaze with a little white wine. Toss in some chopped Thyme and some crushed Walnuts.
Stir Fry some thin sliced Pork Chops with S&P. Sautee some Shrimp in Curry and oil.
Throw it all on a bed of Spinach and top with Watercress.

Eat.
