Marinated Chicken Kabobs

We decided to marinate a little chicken and make kabobs for dinner. Here I'm grating ginger while making Miranda's Ginger Glazed Chicken marinade.

1/2 cup pineapple juice
1/2 cup soy sauce
1/4 sesame oil
1/4 cup olive or vegetable oil
1/4 cup honey
1.5 Tbsp of minced garlic
1 Tbsp grated fresh ginger
1 tsp black pepper

Marinating Away.

And since that marinade we made last night for the beef was pretty good, we whipped some of that up too to see how it goes with chicken.

Marinated Sirloin Steaks

Aight. First thing you need is a couple of dudes with a passion for well made food, and who're willing to cook.

Next you're going to need a little something for a marinade.

Measure out the liquid bits of your marinade. We used -
.5 cup fresh lemon juice,
a third cup evoo,
a quarter cup red wine vinegar,
and two Tablespoons of soy sauce

Then we minced up about a quarter cup of shallots. Added them to the marinade...

We also threw in two Tablespoons of fresh minced rosemary.

Place your steak in the marinade and turn to coat. Then cover and marinate.

And marinate... have a beer... it going to be at least a half an hour...

Then grill your steaks to your desired doneness.

For a side, we also grilled up some corn. It turned out excellent.

Miranda and David also have a garden overflowing with salad greens, so we plucked some and served it up.

Ummmm. Steak.

Bacon Asparagus Pizza!

So David wanted to use up the asparagus his parents gave him, so he made pizza. First you start out with homemade pizza dough, and brush it with olive oil. Top lightly with mozzarella. Then you add the chopped asparagus and cherry tomatoes. Add crumbled bacon.

Dot with Goat Cheese. Season with freshly ground black pepper.

Bake and enjoy.

Pepper Steak

Matt, Mike, and I decided to grill some steaks last night. And while this may not be a "little" pepper, we all enjoy ourselves a little pepper!

We crusted the Tri Tips with black pepper and Chipotle flakes. Served them up with some Spicy Thai potato chips, roasted Anaheim Chiles, and greenbeans. It was pretty dang good.

Tasty Grilled Tuna

Mix together in a small bowl: 1 Tbsp Brown sugar, 1 Tbsp Sesame oil, 1/3 cup Soy sauce, 1/3 cup Rice wine vinegar, 2 minced Garlic cloves, 1/4 inch piece fresh ginger grated, Fresh cracked pepper and Chili pepper flakes to taste.

Drop in hunk of tasty Tuna steak and marinate 2-4 hours.

Grill and eat with your favorite sides.
