Huevos Rancheros!

Jim came down to do taxes and help Matt with moving... so we had to feed him well.

That's fresh tortillas, a spoon or two of my black bean chili, all topped with eggs poached in a fresh salsa.

Now that I've lived through it, I'm not sure this is a good "moving food". Depends on your definition of "moving" I guess.
