Toasted Rock Star Holio


Ok, cut a star like shape thru the center of a whole wheat Pita bread. Add a small amount of oil to a non stick skillet. Open the Pita slightly so the egg can run inside. Place Pita in pan. Place egg in star shape. Fry / toast the pita / egg combo to desired doneness then eat.

Simple Ful Medames




Ful is the Egyptian word for fava beans, and medames is a Coptic word meaning "buried". I guess they would bury a pot of beans and top it with coals or some such thing.
So, this is how it goes, drown your beans overnight or 4-8 hours, drain, rinse, etc. Drop in minature hot tub bring to a boil, reduce heat and simmer until they are tender. Add Garlic and Cumin to taste. Place desired amount on a plate or in a bowl. Drizzle with Extra Virgin Olive Oil, fresh squeezed Lemon juice and some Kosher Salt(better texture). Top with Fried Eggs and serve with a warm Whole Wheat Pita.

Quick and easy Veggie Pita

Stuff a whole Wheat Pita with Spinach, sliced Onions, a little Ketchup, sliced Tomatoes and your favorite Veggie burger patty.
And "No, I am not a veg-etable-arian!" but I do love me some Veg.

Quick and Healthy Pizza

Slice a whole wheat pita in half. Pan roast Garlic. Toast pita halves and smear with roasted garlic. Top with marinara sauce. Cover with as much Onions, Tomatoes, Olives, Jalapenos, Fresh Basil and Mushrooms as you like. Add 2oz. chopped grilled Chicken and 1oz. Low fat Feta. Bake in 350 degree oven 15 min. Add an additional amount of Tomatoes and fresh Basil.
Eat both!
