Smoked Lake Trout (Mackinaw)

Catch a fish / Clean a fish.

Brine a fish. For the brine Chris uses a really basic recipe. Usually 1 cup rough salt (like kosher), 1 cup brown sugar, mixed with one gallon of water.

And you thought smoked fish came from the grocery!

Smoking on up.

For the smoke we use Alder. Although fruit woods such as apple and cherry turn out pretty well too.

  1. I wish I had a picture of one of us filleting the fish. that one would be "fillet'o fish"

  2. I just wanted to say your ears look huge in that one photo. :P

  3. The hat must be pushing them out!

  4. I hope someone cleaned out my sink after those fish were sitting in it!

  5. I believe it got bleached. As it does every time it has fish in it...
