Lemon Time Cod

Take your Cod Piece, drop it on some foil, toss on some diced Shallot, some minced Garlic, some fresh chopped Thyme, diced Tomatoes, Lemon juice and zest. Top with Salt and Pepper to taste. Add 1-2 tbsp water for steam. Wrap up and bake to desired doneness.

Serve over steamed Asparagus.
Yum.
As an alternative you could put the tomatoes on fresh at the end or use Sun Dried Tomatoes...

  1. I don't know how you can eat steamed asparagus when you've got five grill/bbq's! That's like steaming a steak!

    Hey! Have you ever grilled brussels sprouts? Maybe skewered? I remember grillin' bacon on a skewer with you before...

  2. Never grilled brussel sprouts but I bet they would be great. I have a pan with smatt holes in it for grillin' small stuff on the "Q". That might work or perhaps halvingthem then skewer olive oil etc. I only have 3 and one is gas, don't stretch the truth...

  4. O.k. there may be a round Weber in a storage unit somewhere, but your little smoker I ain't got!an'you ran off with the other kingsford and gave it to Josh. so if your little smoker is lonely, its welcome home with its kin... That my friend would make 5!
